A true reflection of place. Grapes selected for our Oakville Sauvito were grown on low-fertility, well-drained soils with optimal sun exposure, enabling development of rich, complex flavors and astounding fruit maturity.

The 2018 Sauvito draws its inspiration from the ancient Italian “appassimento” method of making sweet wine from grapes dried on straw mats. Ripe Sauvignon Blanc and Semillon grapes were pruned from the vine and allowed to dry in the vineyard, still attached to the cane. After sugar levels reached the desired point the grapes were harvested by careful selection between September 26th and October 22nd. Upon arrival at the winery, the grapes were slowly pressed over the course of 12 hours, to extract the maximum amount of flavor possible from the dried grapes. Fermented in French Oak barrels with a specialty selected yeast from Sauternes, France, the wine reached a perfect level of balance at 14% alcohol. It was then allowed to age slowly in barrel for a year before bottling.
