THEN:
Upon release, the 2014 Southing offered the ideal marriage of complexity and elegance. It delivered aromas of Montmorency cherry, baking spice, and dried flowers. The fine tannins and minerality were enhanced by our estate vineyard’s characteristic cool climate acidity.
NOW:
The wine shows a great deal of development, bringing forth a combination of soy sauce, vinegar, and some red berries. On the palate, complex notes of leathered, tarry fruit with creosote and tobacco. A very soft texture gives way to drying tannins and a leathery finish.
